Super Foods Recipe for a Vegetable Salad with Creamy Citrus Dressing

Thought I’d share one of my favorite salads with all of you. The ingredients for this vegetable salad includes broccoli stalks, beet greens, kale, red cabbage, chard, dried cranberries, roasted walnuts, and quinoa.
All ingredients can be found at your local grocery stores. I made sure to purchase organic ingredients from Whole Foods. You can purchase the vegetables separately or you can look for mixed greens in the produce section. I prefer to pick my vegetables, so I can wash and cut my own ingredients; which is a calming activity for me. When it comes to the cranberries look for sugar-free dried cranberries as the dressing will blend all the flavor together so don’t worry about an aftertaste.
Follow the instructions below to create your creamy citrus dressing, which should only take 5-10 minutes while preparing your greens. This recipe produces 10 servings:
2 ounces vanilla yogurt
4 ounces orange juice
2 tablespoons lemon juice
1 tablespoon canola oil
1 teaspoon minced garlic
1 teaspoon ground ginger
1 teaspoon sugar
1 teaspoon ground pepper
1 dash salt (you may remove the dash of salt)
Directions:
Combine all.
Shake it up.
Serve.
Refrigerate.
There are only 25 calories in this recipe with 2G of carbohydrates, 2G of sugar, 40MG of potassium, and 30MG of sodium. (FYI the recommended daily sodium intake should not exceed 2,300MG per day.)
Get you a medium sized Tupperware bowl placing all vegetable and dressing inside secure lid and shake until thoroughly mixed. There you have a simple recipe that can be prepared in advance for a quick nourishing meal and great for packing a lunch.
